Breadless Bruschetta

Ingredients-

2 Tomatoes cut into medallions (OBVIOUSLY)
Minced Garlic
Fresh Basil
Salt
Oregano
Olive Oil
Balsamic Vinegar
Lunch meat of your choice (1 slice)
Cheese of your choice (1 slice)
Chopped olives

Step One-
Load up all the "tiny" ingredients. 
Step Two-

Slice up one piece of cheese and one piece of lunch meat into squares. I use them to sandwich in all the "tiny" ingredients.
Step Three-

Stick in the oven for about 5 minutes at 350 degrees. I drizzled some balsamic vinegar on top.




I have to admit that I missed the bread. It really holds it all together. But for roughly 150 calories and using only 2 tomatoes, it's a pretty good snack.

  1. OMGosh that looks good! I'm gonna have to remember this on the days I'm craving tomatoes. Or olives. YUM!
