Roasted Fennel

I've been pretty much obsessed with my Clean Eating magazine, and I tried this bad boy out today.

Roasted Fennel

Salt and Pepper
Olive Oil
Parmesan Cheese

Prepare your fennel (if you're not sure how to prepare it, go here. I didn't know). Cut the bulb up in wedges, making sure that you keep all the layers together. Boil in a pot of water for about 5 minutes. Once you're done that, drizzle olive oil, salt, and pepper and roast in the oven at 400 degrees for 30 minutes in a pan. Top with some parmesan cheese and roast for another 5 minutes and you're done. 

What I thought about it? 

Well, it's a very intense flavor. Fennel is that seasoning in sausages sometimes. It's kinda a licorice/anise taste. I did like the dish, and I thought it was really good. It's just something you can't eat too much of in one sitting. It becomes very overwhelming. This is definitely an excellent side dish though,
