Spaghetti Squash and Homemade tomato sauce

This is the best clean eating recipe ever in my opinion. Sooooo good and filling.

Spaghetti Squash (noodles) and homemade Tomato Sauce

Ingredients -
Spaghetti Squash
7 large Tomatoes (and I had a few cherry tomatoes I threw into the mix because I didn't want them to go bad)
A few fennel wedges 
1 large Onion
Minced Garlic
Salt and Pepper
Olive Oil

Instructions - 

Preheat your oven for 375 degrees and stick the entire spaghetti squash into the oven. Poke a few holes around the gourd so it doesn't explode in the oven. Let it bake for an hour and then once it's cooled enough to handle, cut it long ways and carve out all of the seeds. Once you've done this use your fork to "shred" the inside of the squash. It's insanely easy and amazing to use for noodles. If you need a better step by step guide on how to prepare your squash, go here

To make the sauce, cut up your tomatoes and cook them in a pan with olive oil until all the juices start flowing. Throw in your chopped up onion, and other ingredients and let it cook down until it's very thick. I think I cooked mine down for 3 hours. Once all the watery juices are mostly gone puree everything up in your processor or blender until you get your desired consistency.
