Anyway, so I had bought some bok choy the other day completely on a whim. I've never even had it before but I've heard people rave about it. So, I googled bok choy recipes and found this.
Bacon-y Bok Choy
Bok Choy (I don't know what it's called, but I pretty much just bought a "bunch")
4 or 5 slices of bacon
Crushed red pepper flakes
1 small red onion (which I didn't have and so I didn't use)
How to prepare it-
Cut the ends off, and then pretty much just dice it up. You can eat the entire thing!
After that, I cooked up the bacon.
When the bacon is done take it out of the pan and chop it up. Make sure to save about a tablespoon of the grease. Pour in about a tablespoon of olive oil, some crushed red pepper flakes, and the garlic. You'd also put the red onion in now, but like I said, I didn't have any. Dump your bok choy in the pan and cover for about 5 minutes. Uncover and saute until soft and add your chopped bacon. Serve immediately!
IT WAS GOOOOOOOOOOD. And I ate the entire pan full. Yeah.
