I'm really digging Country Crock's Clare Crespo Cookbook. It has so many interesting and delicious veggie recipes that are geared towards kids. So when I saw this cool American flag pizza recipe, I had to try it since my kid is PIZZA CRAZY.
It turned out soooooo good and definitely a hit. I made it quickly and everyone was digging in before I knew it. I love that the Clare Crespo Cookbook is full of veggie recipes that are easy and FAST. As a mom of a toddler, I'm always worrying if my kid is getting enough nutrients (what? ketchup is not a vegetable?). Country Crock makes vegetables taste great and is 70% less fat and 30% fewer calories than butter. There's no reason to hide vegetables! I wish I could cut a slice of the spinach side of this pizza and share it with all of you. It was bangarang.
Anyway, I'm anxious to check out some of the other recipes from the Clare Crespo Cookbook. Let me know if any of you do. I hope to post some more of them in the future. Crock Country Chronicle site has a lot of references too.
