I am a little bit TOO excited about this recipe. I'm not sure if it's already been invented (I'm sure it is), but I think I've created the most delicious muffin in the world. And the secret ingredient is INSTANT COFFEE. Excuse my ignorance if you've been baking with instant coffee for ages, but this is totally new to me and I feel like a genius for thinking of it... ha! 

Anyway, so here's what you'll need to make my Apple Banana Coffee Muffins-

>>2 apples
>>2 ripe bananas
>>2-3 tablespoons of instant coffee (I'm not entirely sure how much I used, but I'm sure it was around there. You can add enough to taste.)
>>1 cup of brown sugar
>>Cinnamon to taste
>>1/3 cup melted butter
>>1 egg, beaten
>>1 teaspoon of vanilla extract (use maple syrup instead of vanilla if you're out! I always do and it tastes exactly the same once baked.)
>>1 teaspoon baking soda
>>Pinch of salt
>>1 1/2 cups of flour

Pre-heat your oven to 350 degrees. Chop up your apples and bananas and caramelize on the stove with butter, brown sugar and cinnamon. Add in your coffee. Once that's done, with a wooden spoon, mix butter into the caramelized apples and bananas in a large mixing bowl. Mix in the sugar, egg, and vanilla. Sprinkle the baking soda and salt into the mixture. Add the flour last, mix. 

Scoop about one spoonful of batter into your muffin tin and bake for about 10-15 minutes. This recipe yields about 18 muffins.

VIOLA!  I love the taste of the coffee mixed with the sweetness of the caramelized fruit. Pretty good!
