As some of you know, I have mad love for coconut oil. I slather it all over myself daily... it's amazing! But cooking with it has been kinda new for me. I was kinda scared because I wasn't sure if I wanted a hint of coconut flavor in my food. I mean, wouldn't that kinda be weird? NOPE. IT'S DELICIOUS.
I baked these peanut butter cookies last night (they're totally vegan too!) and substituted butter with coconut oil and it was probably the best decision ever. Here's my recipe-
- 1 cup of packed brown sugar
- 3/4 cup of peanut butter
- 1/2 cup of coconut oil
- 1 tsp of vanilla extract
- 1/4 cup of applesauce
- 1 1/2 cup of flour
- 1 tsp of baking soda
Combine ingredients and then roll into balls on a cookie sheet. You can can flatten with your hand or use your fork to make the cross marks. Bake at 375 for 6-8 minutes (I did 8 minutes). I have noticed that it takes these a little longer to cool once out of the oven. I'm thinking this is because of the oil. Once cool, it's one of the most delicious peanut butter cookies I've ever had. Very soft and smooth.
